I don't have the tab "scrolled up", what I screenshotted is exactly what wiki readers see when first landing on a Fandom wiki page. You don't need to be a professional UX designer to see how horrible the user experience is for readers.
Look at the screenshot I posted. Imagine you're a new reader just landing on this page, and you don't know who Susie is. Does this screenshot answer your question?

It's been 9 years and Fandom still hasn't implemented pinned posts. You still cannot post links without them immediately generating annoying link previews. There is still no auto-saving for your posts, and you can still randomly lose what you typed. You still cannot place personal blocks on people that prevent only you from viewing their posts (a standard feature on virtually every social platform nowadays). That isn't simplicity, that's just a lack of features.

No idea, I can't see what the filter is. But presumably if you mention the new wiki's domain, or post any link to it, it's going to prevent you from posting. I'd have to see what you were posting to have a better guess.
You're hitting Fandom's abuse filter, presumably meant to prevent links to the new wiki.
The way content migration works is this: the new wiki has 0 content, 0 accounts, 0 log entries and 0 files before running the content migration. Then we migrate content, log entries, and files. Accounts that were associated with these content revisions and log entries then get created as stub accounts in the database, which makes them eligible for migration. This is done because we don't want someone else taking the username of a user who has previously done something on the wiki, so these usernames are reserved for users who own the respective Fandom accounts.
If you haven't done anything on the wiki prior to the content migration, there's no point is going through the process to reclaim your account - you can just create a new account, which is much simpler. You can create an edit on the Fandom wiki right now, but that edit won't be transferred to the new wiki. So there's no point in reserving usernames of users who have no revisions and no log entries on the new wiki. The edits being done to userpages are just to prove account ownership, as a part of the migration process.
Account creation creates a log entry. This is why your account was eligible for migration.

For what it's worth, Discourse is the name of the software we're using. The company developing Discourse is called CDCK (Civilized Discourse Construction Kit), which also offers hosted Discourse plans to those willing to pay. A parallel to this would be MediaWiki, which is the software we're using for the wikis, developed by Wikimedia, the nonprofit that hosts Wikipedia. But we're not hosted by CDCK just like we're not hosted by Wikimedia, we're hosting Discourse and MediaWiki ourselves and all the data is under our control.

A single site can use multiple software solutions served under different paths, or different domains, or whatever. So what you see under undertale.wiki/d/ is Discourse, what you see pretty much everywhere else on the wikis is MediaWiki. This is also the case with Fandom - the software under deltarune.fandom.com/f/ is Feeds, and pretty much everything else is MediaWiki.
Feeds is not MediaWiki, but it integrates with MediaWiki and other services that Fandom uses (they use the same account database, users blocked on the wiki are blocked from Feeds, notifications sent from Feeds also show on the wiki...). In our case, as well, Discourse is not MediaWiki but the two are integrated (you log into Discourse using your account from the wiki, you receive Discourse notifications on the wiki side, your Discourse profile is shown above your wiki userpage, related discussions from Discourse are shown below wiki userpages...).
To respond to your other points:
You can see how we're using your data in the privacy policy. Your data does not leave our infrastructure, and no, it's not used to train AI.
You're free to look at PageSpeed Insights to check how we perform against Fandom. Last I checked, we're doing better at performance generally. It's not perfect, but we're working on it.
The search has some advanced features which Fandom does not have, such as wikitext source search. But other than that, try searching for a phrase like "sorry old lady" on both the old and the new Undertale Wiki and see how Fandom spits out some pretty irrelevant results, even if you put quotation marks around it.
To see how the migration system works, you can enter any username that didn't yet reclaim their account into the reclaim username form. Try, for example, MTT News Reporter. It will not let you reclaim that account because you cannot login as that user, but at least it lets you see how it works. Given how many recent edits on this wiki and Undertale Wiki are userpage edits to add the reclaim tokens, I would say it's a pretty intuitive set of steps to follow for users.
MediaWiki is not Discourse, and Discourse is not MediaWiki. Discourse is not used as wiki software, that's MediaWiki's job. The two are fundamentally different software.
When I said zero effort to start editing, I meant wiki editing, which I think is pretty clear. You can edit the wiki without an account, which creates a temporary account that doesn't let leave your IP address in the history (whereas on Fandom it does, because they don't have the temporary account feature).
You had one edit on Deltarune Wiki, so you can use the account reclaimation form to reclaim your account. And I mean, I can't stop you from using Discussions over here.
